Butter Recipes - Compound for Steak, Herb, Garlic, Lemon and More

Heaven Made Compound Butter

Ingredients:
(1) Stick of Real Butter
(1) Tablespoon of It's Incredible Seasoning or Amazin Cajun Seasoning. You may add more seasoning to adjust to your liking.
Plastic Wrap also called Saran Wrap or you could use Candy Molds of all different shapes and sizes.

Directions:
Place the stick of butter in a microwaveable container or in a small pot then place in the microwave or on the stove and heat till melted completely. Add in one tablespoon of It's Incredible Seasoning and bring the mixture to a boil mixing well for about 30 seconds then remove from microwave or stove top. Place mixture in a cooler container and place in the refrigerator to start the cooling down process. The mixture will have settled into two parts from the cooking so set a timer for 30 minuets and leave in the refrigerator. When the timer goes off remove mixture from refrigerator and thoroughly mix with a spoon. Return to refrigerator for another 30 minuets or until the mixture gets to a pudding like consistency and mix thoroughly again. Now roll out a section of Plastic Wrap about 16 inches long. Spoon mixture onto Plastic Wrap in line from side to side, you are going to make a roll with the butter so spoon mixture in a row, then take the Plastic wrap up on one side, the side closest to you and start to pull up rolling the butter forward, then bring the Plastic Wrap down over the roll and past the roll by about 4 inches then stick the Plastic wrap onto the saran wrap and slide your fingers back towards the roll of butter securing the Plastic wrap. With your thumb you can work the butter from side to side shaping the roll until it looks even. Now roll it up into a roll, twist the ends as tight as you can and place back into the refrigerator until the compound butter roll hardens completely.

Optional Ingredients:
For more spice you can add any of the following or a combination of several to create your own dip. When you experiment and come up with a great recipe send it to us and we’ll post it on our site and give you all of the credit.

Add in one of 10-Thousand Hot Sauce’s available, or one of the many flavors of Tabasco Sauce. 

Add in a little Black Pepper, White Pepper, Cayenne Pepper. 

Try some Dry White Wine or Beer. If using any Alcohol cook the Compound Butter until all of the Alcohol has evaporated and only use a small amount so you don’t over power the Compound Butter.

Maître d'Hôtel Butter is the most common form of what is called a "Compound Butter," which simply means that there is some sort of flavoring or seasoning ingredient added to the butter in this case we add a bit of chopped parsley and lemon juice. Typically compound butters are rolled into cylinders and chilled or even frozen, and then slices or pats are served on steaks, fish or vegetables.

Heaven Made Maître d'Hôtel Butter Recipe

Ingredients:
1 lb (4 sticks) unsalted butter 
1 Teaspoon Heaven Made Amazin Cajun Seasoning
1 Teaspoon Heaven Made It's Incredible Seasoning
¼ cup chopped Italian parsley (leaves only, minced) 
3 Tbsp lemon juice (juice from about 1 lemon)

Directions:
Place the 4-sticks of butter into a microwaveable container or in a small pot then place in the microwave or on the stove and heat till melted completely. Add in the seasoning and the Parsley and bring the mixture to a boil mixing well for about 30 seconds then remove from microwave or stove top. Place mixture in a cooler container and place in the refrigerator to start the cooling down process. Now roll out a section of Plastic Wrap about 16 inches long. Spoon mixture onto Plastic Wrap in line from side to side, you are going to make a roll with the butter so spoon mixture in a row, then take the Plastic wrap up on one side, the side closest to you and start to pull up rolling the butter forward, then bring the Plastic Wrap down over the roll and past the roll by about 4 inches then stick the Plastic wrap onto the saran wrap and slide your fingers back towards the roll of butter securing the Plastic wrap. With your thumb you can work the butter from side to side shaping the roll until it looks even. Now roll it up into a roll, twist the ends as tight as you can and tie each end off with a piece of string or you can even make a string out of a short section of plastic wrap and rolling it into a little rope. Now place back into the refrigerator or freezer until the compound butter roll hardens completely.

Garlic Butter Recipe (for [1] Stick of Butter)

Add one Clove of Garlic, minced to the recipe when making a compound butter using the It's Incredible Seasoning.

Lemon Butter Recipe (for [4] Sticks of Butter)

Add the Zest (minced) and Juice of one Lemon to the recipe along with 3 teaspoons fresh Italian Parsley, finely chopped (or 1-Teaspoon of dried Parsley) when making a compound butter using the Steak or Amazin Cajun Seasoning. You can also add in 1-2 tablespoons fresh herb (I usually use Thyme and/or Basil for this recipe. If using both, it’s 1-Tablespoon total or to taste. Remember, chop finely.)

Herb Butter Spread

Ingredients:
3/4 cup Salted Butter, room temperature 
1 Teaspoon Heaven Made Amazin Cajun Seasoning
1 Teaspoon Heaven Made It's Incredible Seasoning
2 Tablespoons fresh Chives, minced 
2 Tablespoons fresh Basil, minced 
2 Tablespoons fresh Parsley, minced 
1 Teaspoon Honey Dijon Mustard 
Ground white pepper to taste

Instructions:
In a small mixing bowl, cream together the Butter, Seasoning, Chives, Basil, Parsley and Mustard Add Pepper to taste Cover the bowl and allow the spread to stand in a cool place for about 1 hour so the flavors can mingle

Mix again place spread on Wax Paper or Parchment Paper and form into a Log twist ends of Paper to seal and store in Refrigerator (or freezer if not using soon) Cut portions from log as needed

Chile-Lime-Tequila Compound Butter Recipe

Ingredients:
6 Tablespoons unsalted Butter (3/4 stick), at room temperature 
2 Teaspoons minced Jalapeño or Serrano Chiles, Seeds and Membranes removed 
1 Tablespoon freshly squeezed Lime Juice from 1/2 medium Lime) 
2 Teaspoons Tequila (optional) 
2 Teaspoons freshly ground Black Pepper 
1 Teaspoon Heaven Made Amazin Cajun Seasoning

Instructions:
Place Butter in a medium Bowl and, using a Rubber Spatula, soften until it’s very spreadable. Add remaining ingredients and mix until thoroughly combined. Place Compound Butter on a sheet of Plastic Wrap. Roll into a Log and twist the ends to seal. Place Butter in the Refrigerator to harden.

You may also cook all of the ingredients on the Stove Top for a minuet especially when using the Tequila. When cooking this mixture the Alcohol in the Tequila will evaporate which is best.

Raw Serrano Compound Butter Recipe

4 Tablespoons unsalted Butter, room temperature2 Serrano Chiles, deveined and seeded, loosely chopped 1/4 Teaspoon Heaven Made Amazin Cajun Seasoning

Combine in a small bowl and puree with a Hand Blender until the Chiles are fully incorporated. Refrigerate.

Smoked Paprika Compound Butter Recipe

4 Tablespoons unsalted Butter, room temperature1 - 1 1/2 Teaspoons Smoked Paprika
1/4 Teaspoon Heaven Made Amazin Cajun Seasoning

Blue Cheese Compound Butter

Ingredients:
3/4-pound unsalted Butter at room temperature
2 Tablespoons Dijon Mustard 
1 Tablespoon fresh Thyme leaves, finely minced
1/4 Teaspoon Heaven Made Amazin Cajun Seasoning
1/2 pound good quality Blue Cheese, crumbled

Directions:
In a mixing Bowl, mix the Butter, Mustard, Thyme, Heaven Made Amazin Cajun Seasoning, and Blue Cheese. Gently blend with a wooden Spoon until all is incorporated. Taste for seasoning and add more Heaven Made Amazin Cajun Seasoning if desired.

Avocado Compound Butter

Ingredients:
6 ounces ripe Avocado Meat, approximately 2 small Avocados 
1 Tablespoon freshly squeezed Lemon Juice 
2 ounces unsalted Butter, softened 
1 Garlic Clove, minced 
1 Tablespoon freshly chopped Cilantro Leaves 
2 Teaspoons ground Cumin 
1/4 Teaspoon Heaven Made Amazin Cajun Seasoning
Freshly ground Black Pepper to taste

Directions:
Peel and pit the Avocados. Place all ingredients into the Bowl of a Food Processor and process until well combined. Place mixture onto a sheet of Parchment Paper and shape into a Log. Place in the refrigerator for 3 to 4 hours.
