Ingredients
1/2 Cup Vegetable Oil
3/4 Cup All Purpose Flour
4 Tablespoons Heaven Made Products Amazin Cajun Seasoning
1 Cup Diced Onions
1/2 Cup Diced Red Bell Pepper
1/2 Cup Diced Celery
1 1/2 Cups Diced Andouille Sausage
1/2 Cup Diced Tasso
3 Tablespoons Chopped Garlic
1 Cup Sliced Okra
8 Cups Shrimp or Seafood Stock
3 Fresh Bay Leaves
4 Cubed Chicken Thighs
2 Tablespoons Worcestershire Sauce
1 Pound Peeled Shrimp
1 Dozen Shucked Oysters
1 Teaspoon Louisiana Cajun Hot Sauce
2 Tablespoons Chopped Parsley
1/4 Cup Thinly Sliced Green Onions
Directions
1 Heat the vegetable oil in a Cast Iron Dutch Oven over medium heat. Whisk in the all purpose flour to make a brown roux (milk chocolate color).
2 Add in the sausage, onion, celery, bell pepper, and 1 Tablespoon of Heaven Made Products Amazin Cajun Seasoning. Cook, stirring constantly for about 10 minutes or until the Vegetables soften.
3 Stir in the Chicken stock, remaining Heaven Made Amazin Cajun Seasoning, Okra, and Garlic. Bring to a Boil. Then, reduce heat to a simmer.
4 In a separate pan, brown the chicken meat on medium to high heat on all sides in a little oil. Then add in the chicken, and let it cook 2 hours, stirring occasionally.
5 About 10 minutes before ready to serve, add the shrimp and oysters. Cook until the edges curl.
6 Stir in worcestershire, Louisiana hot sauce, and green onions. Serve with Fresh Cooked Rice and/or Fresh Crusty French Bread, garnish with parsley, and enjoy!
